Carolus is Antichi Vigneti di Cantalupoβs white wine, created to keep alive an ancient tradition in Ghemme: even in a region historically renowned for its great red wines, winegrowers used to preserve a few rows of white grapes to make wine for family occasions.First produced in 1992, it is a blend of Greco di Ghemme, Arneis and Chardonnay.Greco di Ghemme is the name by which Erbaluce is traditionally known in the Novara area. The name Carolus pays homage to Saint Charles Borromeo, who travelled along the road to Arona overlooking the vineyards, and at the same time honours Carlo, the producerβs father, who celebrated his 80th birthday in 1992.The three grape varieties are vinified separately: after being harvested into crates, the grapes are gently pressed and the free-run juice β that is, the first and most delicate fraction of juice obtained from the grapes β ferments slowly at a controlled temperature of around 20 °C.The different wines are then blended in the spring, shortly before bottling.
