Ruchè is one of the rarest indigenous grape varieties in the Monferrato Astigiano region.
Its cultivation is concentrated in a very limited area of the province of Asti, comprising just seven municipalities, and produces wines that are recognisable for their aromatic, floral and spicy character.

The Briccone from Castello of Razzano is produced exclusively from Ruchè grapes, sourced from vineyards situated at an altitude of around 280 metres, on south-facing clay and sandy soils.
The grapes are harvested by hand.
After the harvest, the grapes are vinified in stainless steel tanks at a controlled temperature of 22 °C, with the must left on the skins for 5–6 days.

The wine then matures for six months in stainless steel, without any time spent in oak.
This process allows the fruity profile and natural aromatics of the Ruchè to remain at the forefront.

Alcohol content: 15% vol.

──────── IN THE GLASS ────────

β€’ COLOUR: a bright ruby red of moderate intensity, characteristic of the grape variety.
β€’ NOSE: fruity and slightly aromatic, it may reveal notes of flowers, spices, wild berries and morello cherry.
β€’ PALATE: On the palate, it tends to be dry, well-balanced and pleasantly smooth, with good aromatic persistence.

──────── FOOD PAIRINGS ────────

Thanks to its aromatic character and pleasant smoothness, Ruchè can accompany a variety of dishes without necessarily requiring particularly robust preparations.
Briccone pairs well with starters featuring cured meats and medium-aged cheeses.
It is also well-suited to fresh egg pasta dishes, particularly when they feature a flavourful filling.
It can also be served with meat main courses that are not overly fatty.

──────── SERVING ────────

Serve at a temperature of around 16 °C, which allows you to appreciate its fruity and aromatic qualities without the alcohol content becoming overly pronounced.

──────── STORAGE ────────

The recommended average shelf life is 3–4 years from bottling.
The bottle should be stored away from light and temperature fluctuations, preferably lying on its side in a cool, dry place.
