Vite Colte’s Derthona is made exclusively from Timorasso grapes, a rare indigenous Piedmontese variety deeply rooted in the Tortona hills, where its cultivation has been documented since the Middle Ages.

Long confined to a small area of Piedmont and having almost disappeared, the Timorasso has been revived and promoted to the point of becoming one of the symbols of viticulture in the Tortona Hills.

It is particularly appreciated for its structure and for its ability – uncommon amongst white wines – to develop greater complexity as it ages in the bottle.

For Derthona, following a gentle crushing and a brief cold maceration, the free-run juice from the first pressing is used and fermented at a controlled temperature of between 16 and 18 °C.
The wine then continues to mature on the lees and fine sediment, ageing in stainless steel for at least 12 months: a lengthy process that Vite Colte employs to enhance its complexity and longevity.

Alcohol content: 14% vol.

──────── IN THE GLASS ────────

β€’ COLOUR: intense straw yellow.
β€’ NOSE: complex, with floral notes of acacia and hawthorn blending with ripe peach and honey.
Mineral and flinty notes round off the profile.
β€’ PALATE: dry and savoury, with good body and a firm structure.
The finish is intense and persistent.

──────── FOOD PAIRINGS ────────

Derthona’s structure allows for more substantial pairings than many white wines.
It pairs well with starters, cured meats, risottos and flavourful first courses, as well as seafood dishes, from seafood-based first courses to grilled fish.
It is also particularly well-suited to white meats, whether boiled or served with sauces, and to traditional dishes such as vitello tonnato.
It can also be paired with omelettes, spicy dishes and medium-aged or well-aged cheeses.

──────── SERVING ────────

Serve chilled, at a temperature of approximately between 10 and 12 °C.

──────── STORAGE ────────

Derthona is a white wine with good ageing potential, and its long ageing process is also designed to enhance its longevity.
It can therefore be enjoyed young or left to rest in the bottle for a few years, stored in a cool place away from light.
