Dried tomatoes retain the intense, distinctive flavour of Italian tomatoes, which is made even richer and more pronounced by the drying process.
Once rehydrated, they can be seasoned and served as a starter, or used to enhance bruschetta, focaccia, sandwiches and salads.
Chopped into small pieces, they add character to pasta dishes, side dishes and fillings; blended with oil and aromatic herbs, they also make a flavourful sauce to spread on bread or use as a dressing.
Before use, you should rinse them in cold water and then leave them to soak in lukewarm water for about 30 minutes, to soften them and remove any excess salt. Then drain them and gently squeeze out the excess water.
• TRY IT THIS WAY: After soaking and draining them, finely chop the dried tomatoes and add them to a grilled cheese sandwich with mature Cheddar.Their intense flavour contrasts deliciously with the melted cheese and crisp, buttery bread.
